Paul Heathcote’s career has spanned some of the leading restaurants in the world before opening his eponymous restaurant. His accolades include two Michelin Stars, Egon Ronay Chef of the Year and three Catey’s.
Paul has found a blend of youth, restaurant experience and a five-star hotel background in Riad Ziadi, our Executive Head Chef. Riad’s career includes two head chef roles for Mark Hix at his Oyster & Chop House, as well as Hix Soho. His more recent role was as head chef at Rocco Forte’s Browns Hotel in Mayfair. Our Loch Duart salmon fillets are cured in salt and molasses for 24 hours by our chefs, then smoked in house for six hours before being served with our freshly baked soda bread handmade by in house baker.Dukesmoor SteaksWe aim to provide the best steaks and burgers in Bolton and our Dukesmoor beef is reared to a unique specification, dry aged for 14 days in sealed chillers, deboned and aged for a further 14 days, which delivers consistent flavour, succulence and tenderness.
